Food processing plays an important role in the conservation and effective utilization of available food supply, as also in the diversification of dietary habits. With increasing commercialization of the agricultural sector, the production base has widened and the industry has gained in stature.
New and improved products, modernization of plants, new equipment, automation, advertising, research and development have provided fresh impetus to the industry. India s food industry may be broadly classified into the following:
1) The basic or primary food industry: This comprises units engaged in rice and flour milling, legume and oil seed processing, and manufacture of sugar and jaggery.
2) The processed food industry: This deals with the production of biscuits and bakery goods, confectionery, vanaspati, meat and fish products, fruit and vegetable products, breakfast items, dairy products including infant foods, starch and its derivations, malt and malt-based products.
